These vegetables are earthy, sweet, and good to eat either raw or cooked. You can eat carrots as a snack with a dip, in salads and coleslaw, or as part of a large entree. Our favorite way to eat these carrots is smothered in olive oil and maple syrup and then roasted in a 375 degree oven for 45 minutes. It's carrot candy!
